Espresso suddenly bitter with no changes to how we’re making it?

I’ve had an espresso machine for almost a year now and have used the same process since first getting it down pat shortly thereafter. However, recent attempts have resulted in a very bitter tasting espresso, which is uncharacteristic.

We’re using the same brand and type of grounds, the same timing, the same amount of tamping of the grounds, the same amount of coffee. We clean the machine to the manufacturer’s instructions each time we use it, and use fresh water each time we brew.

Any idea what would cause this change?

What is the healthiest coffee creamer to use?

I love to have one good cup of coffee a day in the morning. I recently realized that the amount of Coffee Mate Vanilla liquid creamer that I use is way beyond the recommended serving size – which is probably why it tastes so good! Does anyone have any suggestions for an alternative coffee creamer that would be healthier with less fat and sugar – and still taste good? I know I should learn to drink it black but I just don’t like it that way ….. Thanks for your suggestions!!

Can someone provide me with a good coffee frappe recipe?
